My favorite ice cream to get from ice cream trucks growing up was the Good Humor Strawberry Shortcake bar. Thanks to @ketodashapril, I learned that you can keto-fy my favorite childhood treat!

Keto Strawberry Shortcake Ice Cream Bar

Time: 60 minutes

Ingredients

For the vanilla shortcake:
  • 1 packet JELL-O SF Vanilla Pudding
  • 1/4 cup almond flour
  • 1/2 stick softened unsalted butter
For the strawberry shortcake:
  • 1 packet JELL-O SF Strawberry flavored gelatin
  • 1/4 cup almond flour
  • 1/2 stick softened unsalted butter
For the ice cream:

Instructions

  1. Preheat oven at 350°F 
  2. In small mixing bowls, separately mix together the vanilla and strawberry ingredients
  3. On a lined baking sheet, transfer the vanilla mixture to one side and the strawberry to the other, flattening with a dowel or with hands
  4. Bake for 7 mins
  5. Allow to cool for 30 mins at room temp. Transfer baking sheet to fridge and cool for another 30 mins
  6. Crumble the vanilla and strawberry shortcakes together by pulsing gently in a food processor or in a ziplock bag with a dowel
  7. Transfer softened vanilla ice cream to ice cream bar molds and allow to harden for a few hours
  8. Dip vanilla bars into strawberry/vanilla shortcake mixture until well coated. Freeze again for a few hours to set and enjoy!
