Keto Strawberry Shortcake Ice Cream Bar
Time: 60 minutes
Ingredients
- 1 packet JELL-O SF Vanilla Pudding
- 1/4 cup almond flour
- 1/2 stick softened unsalted butter
- 1 packet JELL-O SF Strawberry flavored gelatin
- 1/4 cup almond flour
- 1/2 stick softened unsalted butter

Three containers of CraftBelly Delights Vanilia Vanilla ice cream (to make three bars)

3 serving silicone ice cream bar mold (purchased from Amazon)
Instructions
- Preheat oven at 350°F
- In small mixing bowls, separately mix together the vanilla and strawberry ingredients
- On a lined baking sheet, transfer the vanilla mixture to one side and the strawberry to the other, flattening with a dowel or with hands
- Bake for 7 mins
- Allow to cool for 30 mins at room temp. Transfer baking sheet to fridge and cool for another 30 mins
- Crumble the vanilla and strawberry shortcakes together by pulsing gently in a food processor or in a ziplock bag with a dowel
- Transfer softened vanilla ice cream to ice cream bar molds and allow to harden for a few hours
- Dip vanilla bars into strawberry/vanilla shortcake mixture until well coated. Freeze again for a few hours to set and enjoy!
